Molecular Gastronomy. Molecular Gastronomy blends physics and chemistry to transform the tastes and textures of food. The term Molecular Gastronomy is commonly used to describe a style of cuisine in which chefs explore culinary possibilities by borrowing tools from the science lab and ingredients from the food industry. Formally, the term molecular gastronomy refers to the scientific discipline that studies the physical and chemical processes that occur while cooking. Molecular gastronomy seeks to investigate and explain the chemical reasons behind the transformation of ingredients, as well as the social, artistic and technical components of culinary and gastronomic phenomena. Many modern chefs do not accept the term molecular gastronomy to describe their style of cooking and prefer other terms like “modern cuisine”, “modernist cuisine”, “experimental cuisine” or “avant-garde cuisine”. Molecular gastronomy research starts in the kitchen where chefs study how food tastes and behaves under different temperatures, pressures and other scientific conditions.

Prof. (Chef) Subhadip Majumder was a student of IHM Kolkata and every day while travelling to my college, I had to pass by the Indian Passport office where I used to see a long queue of people standing for their passport form submission and at the back of my mind a dream started to take shape; a dream of travelling, which by virtue of my father's passion was inherently in built. But my dream was a little different. I dreamt of seeing the whole world by becoming a Master Chef. Thus began my journey in pursuit of my goal and I was employed as a butcher with the Royal Olympic Cruises of Greece and went on to join Costa Cruises of Italy which was truly a very pleasant experience my life.

 

Though my stint with Cruise Lines gave me an opportunity to travel and see the world as I had always dreamed, deep within I missed my family and wanted to spend time with them whom I had seen for ages. I considered the option of joining some luxury Indian hotels, but their style of functioning deterred me from doing so. It was at this point in my life I had to make a serious career decision.

 

Now that my dream of travelling had been fulfilled, I had a new dream. I wanted to be able to transfer the rich experience I had picked up during my globetrotting to students who had the passion I, was once consumed with. That is what led me into the realm of academics where in a very short span of time I realised that this was my true calling. As the work transformed into passion, I was able to eventually rise to the level of Professor, a respectable title in the academic fraternity.

 

The journey in academics continued with DSMS Group of Institution, West Bengal and moving further, I came to Delhi and began working at the RIG Institute of Hotel Management. In time I also worked at the G.D Goenka University, RNB Global University and finally Lovely Professional University where I was accorded the post of Professor.

 

The academic journey of reaching to the level of a professor was not a road of a smooth velvety carpet. I had to rework on my academics to complete my higher education. Research and development became a part of my life for which I had to travel in various parts of the country and study rigorously to attain. During this time, I had started preparing and presenting research papers at various universities and for various renowned research journals. I started writing books and presently I have 10 books and 2 book chapters against my name. There are 12 research papers which are published and around 100 plus articles available against my name.

 

But as well said by the laurates: “Education has no End”. The next step was to go further and this time it was along with the organisation. Silver Mountain Group and especially Silver Mountain School of Hotel Management and their Directors gave me the chance to move further so that I grow along with the organisation. My research work took a different tangent wherein I got the chance to file patents against my name along with my organisation. Hence, I filed to the “Office of the Controller General of Patents, Design and Trade Marks”, Government of India for four different patents and which are:

It is an honour for me and for my organisation that these patents have not only helped on creating a name rather it is an international accreditation. They also secured a certain number which enables an organisation to apply for certain ranking globally. I am proud to announce that I am the first Professor Chef in Nepal who has seven patents against his name and at the same time Silver Mountain Group is the first organisation in the entire Nepal which has four patents on their name.

 

It has been quite an eventful journey for me with all its ups and downs but the sheer pleasure I derive from being able to make a difference in another person's life continues to drive me on.
